One-Pan Cheesy Broccoli and Rice Casserole

1 cup uncooked long-grain white rice

2 cups vegetable or chicken broth

2 cups fresh broccoli florets

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup cream cheese, softened

1 small onion, diced

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt (or to taste)

1 tablespoon olive oil or butter

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Pan: In a large skillet or pan, heat the olive oil or butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and sauté for another 1-2 minutes, until fragrant.

    Cook the Rice: Add the uncooked rice to the skillet and stir for 1-2 minutes to toast the rice slightly. Pour in the broth, then add garlic powder, onion powder, paprika, salt, and black pepper. Stir well.

      Add Broccoli: Bring the mixture to a gentle boil, then reduce the heat to low. Add the broccoli florets to the pan, cover it with a lid, and let it simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.

        Mix in the Cheese: Once the rice is cooked, stir in the softened cream cheese and the shredded cheddar cheese until melted and creamy. Adjust seasoning if necessary.
