One-Pan Cheesy Broccoli and Quinoa Casserole

1 cup quinoa, rinsed and drained

2 cups vegetable broth

2 cups broccoli florets (fresh or frozen)

1 cup shredded sharp cheddar cheese

1 cup milk (or plant-based milk)

1/2 cup plain Greek yogurt (or dairy-free yogurt)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil

Fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook Quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is fluffy and the liquid has been absorbed. Remove from heat and fluff with a fork.

      Prepare the Broccoli: If you are using fresh broccoli, steam the florets until bright green and tender, about 4-5 minutes. If using frozen, just thaw them in the microwave or in boiling water for a few minutes.

        Mix Ingredients: In a large mixing bowl, combine the cooked quinoa, steamed broccoli, shredded cheddar cheese (reserve a handful for topping), milk, Greek yogurt, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.

          Transfer to Pan: Lightly grease a large oven-safe skillet or casserole dish with olive oil. Pour in the quinoa and broccoli mixture, spreading it evenly across the pan.

            Prepare Topping: In a small bowl, combine the reserved shredded cheese and breadcrumbs with a drizzle of olive oil, mixing until well coated. Sprinkle this mixture generously over the quinoa casserole.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.
