Ingredients

2 cups broccoli florets (fresh or frozen)

2 cups cooked rotisserie chicken, shredded

1 cup uncooked rice (white or brown)

2 cups chicken broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Instructions

Preheat the oven to 375°F (190°C).

Prepare the pan: In a large oven-safe skillet or baking dish (at least 9x13 inches), heat the olive oil over medium heat.

Sauté broccoli: Add the broccoli florets and sauté for about 3-4 minutes until they are slightly tender but still crisp. Turn off the heat.

Combine ingredients: In the same skillet, add the shredded rotisserie chicken, uncooked rice, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Stir well to combine.

Add cream cheese: Drop spoonfuls of the softened cream cheese over the mixture and gently fold it in, ensuring it's evenly distributed.

Cheese it up: Sprinkle both the cheddar and mozzarella cheese evenly over the top of the mixture.

Cover and bake: Cover the skillet with aluminum foil and place it in the preheated oven. Bake for 25 minutes.

Final cheese melt: Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden brown and the rice is tender.

Garnish and serve: Once done, let it cool for a few minutes, then garnish with chopped fresh parsley if desired. Serve warm and enjoy your cheesy, comforting one-pan dish!
