1 medium zucchini (about 1 cup, grated)

1 cup all-purpose flour

1/2 cup cocoa powder (unsweetened)

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup sugar (you can substitute with coconut sugar for a healthier option)

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips (plus a few extra for topping, optional)

1/2 cup chopped walnuts or pecans (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. If it’s very watery, place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.

      Mix Dry Ingredients: In a large mixing bowl, combine the flour, cocoa powder, baking soda, baking powder, and salt. Whisk them together until well mixed.

        Add Sugar and Wet Ingredients: Create a well in the center of the dry ingredients and add in the sugar, vegetable oil, eggs, and vanilla extract. Use a spatula or wooden spoon to stir until just combined. The batter will be thick but should not have flour streaks.

          Incorporate Zucchini and Chocolate Chips: Fold in the grated zucchini, chocolate chips, and nuts (if using) until evenly distributed. Be careful not to overmix.

            Transfer to Loaf Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Sprinkle a few extra chocolate chips on top if desired.
