1 cup rolled oats

1 cup buttermilk (or milk with 1 tablespoon of vinegar)

1/2 cup brown sugar, packed

1/3 cup vegetable oil (or melted coconut oil)

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour (or whole wheat flour)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup raisins or chopped nuts (optional)

1/2 cup chopped apples or berries (optional but recommended)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with cooking spray. This will prevent sticking and make cleanup easier!

    Combine the Oats and Buttermilk: In a medium bowl, combine rolled oats and buttermilk. Let this mixture sit for about 10-15 minutes. This allows the oats to absorb some moisture and soften.

      Mix Wet Ingredients: In another large bowl, whisk together the brown sugar, vegetable oil, egg, and vanilla extract. Once mixed, add the oat mixture and stir until just combined.

        Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture. Stir gently until just combined. Do not overmix; it’s okay if there are a few lumps left.

            Add Mix-Ins (Optional): If you're using raisins, nuts, or fresh fruits, gently fold them into the batter.

              Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about two-thirds full.

                Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.

                  Cool & Enjoy: Once baked, remove the muffins from the oven. Let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
