1 cup rolled oats

1 ½ cups almond milk (or any milk of your choice)

1 cup all-purpose flour

1 cup brown sugar, packed

1/2 cup unsweetened applesauce

1/3 cup vegetable oil (or melted coconut oil)

3 medium apples, peeled and diced (about 2-3 cups)

1/2 teaspoon salt

1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons ground cinnamon

1 teaspoon vanilla extract

Optional: 1/2 cup chopped walnuts or pecans

Optional: Powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.

    Soak the Oats: In a medium bowl, combine the rolled oats and almond milk. Let it soak for about 15 minutes while you prepare the other ingredients. This will help soften the oats.

      Mix Wet Ingredients: In a large mixing bowl, combine the brown sugar, applesauce, vegetable oil, and vanilla extract. Whisk until well combined.

        Add Oats: Add the soaked oats (with any remaining milk) into the wet mixture and stir until incorporated.

          Combine Dry Ingredients: In a separate bowl, mix the flour, salt, baking powder, baking soda, and ground cinnamon together.
