For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

For the filling:

8 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the topping:

2 cups mixed fresh fruits (such as strawberries, blueberries, peaches, and kiwi)

¼ cup apricot preserves (or fruit glaze)

Mint leaves for garnish (optional)

Instructions
 

Prepare the crust: In a large mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Mix until well combined and the mixture resembles wet sand.

    Form the crust: Press the crust mixture firmly into the bottom and up the sides of a 9-inch tart pan. Ensure the crust is evenly distributed and compact. After forming, place it in the refrigerator to chill for at least 30 minutes.

      Make the filling: In a medium bowl, use a hand mixer to beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, continuing to beat until fully incorporated.

        Whip the cream: In a separate large bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture until smooth and creamy. Be gentle to maintain the lightness.

          Assemble the tart: Remove the crust from the refrigerator. Spoon the cream cheese filling into the chilled crust, spreading it evenly with a spatula.

            Add the fruit: Generously arrange the mixed fresh fruits over the cream cheese filling in an artistic pattern.

              Glaze the fruit: In a small saucepan, gently heat the apricot preserves over low heat until melted. Brush the glaze over the top of the fruit to give it a shiny finish and to keep them fresh.

                Chill and serve: Return the tart to the refrigerator and let it chill for at least 2 hours before serving. Garnish with mint leaves if desired.
