For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz (2 cups) cream cheese, softened

¾ cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipped cream

For the strawberry topping:

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch (optional, for thickening)

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and resembles wet sand. Press the mixture firmly into the bottom of a lined 9x9-inch baking pan to form an even layer. Place in the refrigerator to set while you prepare the filling.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated. In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture until well combined and fluffy.

      Assemble the cheesecake bars: Remove the crust from the refrigerator and spread the cheesecake filling evenly over the crust. Smooth the top with a spatula. Cover and refrigerate for at least 4 hours or until firm.

        Prepare the strawberry topping: In a small saucepan over medium heat, combine the sliced strawberries, granulated sugar, lemon juice, and cornstarch (if using). Cook, stirring gently, until the strawberries start to release their juice and the mixture thickens slightly, about 5-7 minutes. Remove from heat and let cool to room temperature.

          Final assembly: Once the cheesecake filling is set, pour the cooled strawberry sauce over the top, spreading it evenly. Return the bars to the refrigerator for an additional 30 minutes to allow the topping to set.
