2 cups graham cracker crumbs

1 cup mini marshmallows (plus extra for topping)

1 cup semi-sweet chocolate chips

1/2 cup unsalted butter, melted

1/2 cup peanut butter (or almond butter)

1/4 cup powdered sugar

1 teaspoon vanilla extract

Prepare the Pan: Line an 8x8-inch square baking dish with parchment paper, leaving an overhang to easily lift out the bars later. Lightly grease with cooking spray.

    Mix the Crust: In a large mixing bowl, combine the graham cracker crumbs, melted butter, powdered sugar, and a pinch of salt. Stir until well combined and crumbly.

      Form the Base Layer: Press half of the graham cracker mixture firmly into the bottom of the prepared baking dish, creating an even layer.

        Melt Chocolate & Peanut Butter: In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

          Layer the Bars:

            - Pour half of the melted chocolate and peanut butter mixture over the graham cracker crust.

              - Spread it evenly, then sprinkle the mini marshmallows over the chocolate layer.

                - Drizzle the remaining chocolate mixture on top of the marshmallows.

                  Top with Crust: Sprinkle the remaining graham cracker mixture evenly over the top, pressing gently to adhere.

                    Add Extra Marshmallows: For an extra gooey finish, sprinkle additional mini marshmallows on top.

                      Chill: Cover the dish with plastic wrap and refrigerate for at least 2-3 hours, or until the bars are set and firm to the touch.
