Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1/2 cup sour cream

1/4 cup fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

1 cup heavy whipping cream

Fresh blueberries and lemon slices, for garnish

Instructions

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. Set aside.

Make the Cheesecake Filling: In a large bowl, using a hand mixer, beat the softened cream cheese until smooth. Gradually add the powdered sugar, mixing until well incorporated.

Incorporate Sour Cream and Lemon Flavor: Add the sour cream, fresh lemon juice, lemon zest, and vanilla extract to the cream cheese mixture. Continue to mix until smooth and creamy.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the lemon cheesecake mixture until fully combined, being careful not to deflate the whipped cream.

Assemble the Parfaits: In serving glasses or bowls, layer the graham cracker crust at the bottom, followed by a layer of the lemon cheesecake filling. Repeat the layers until the glasses are filled, finishing with a cheesecake layer on top.

Chill: Place the assembled parfaits in the refrigerator for at least 4 hours, or overnight if possible, to allow the flavors to meld and the cheesecake to set.

Serve and Garnish: Before serving, garnish the parfaits with fresh blueberries and a slice of lemon on top for an extra pop of color and flavor.
