Ingredients

2 cups rolled oats

1 cup pitted Medjool dates

1/2 cup almond butter (or peanut butter)

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1/2 teaspoon sea salt

1/2 cup chopped nuts (e.g., walnuts or almonds)

1/2 cup dark chocolate chips (optional for topping)

1/4 cup shredded coconut (optional for garnish)

Instructions

Prep the Dates: Start by soaking the pitted Medjool dates in warm water for about 10 minutes until they soften. Drain and set aside.

Blend the Base: In a food processor, combine the soaked dates, almond butter, honey, vanilla extract, and sea salt. Blend until you achieve a smooth, sticky mixture.

Incorporate Oats: Add the rolled oats to your processor and pulse until well combined. The mixture should be thick and slightly crumbly yet hold together when pressed.

Add Nuts: Fold in the chopped nuts, stirring by hand until they are evenly distributed throughout the mixture.

Prepare the Baking Dish: Line an 8x8 inch (20x20 cm) baking dish with parchment paper for easy removal. Press the oat mixture firmly into the prepared dish, creating an even layer.

Optional Chocolate Layer: If using chocolate chips, melt them in a microwave-safe bowl in 30-second intervals, stirring until completely melted. Pour the melted chocolate over the oat mixture and spread it evenly with a spatula.

Chill: Refrigerate the slice for at least 2 hours or until it’s firm enough to cut into squares.

Slice and Serve: Once set, lift the entire slice out of the dish using the parchment paper. Cut into squares or bars and sprinkle with shredded coconut if desired.

Storage: Store the slices in an airtight container in the refrigerator for up to a week or in the freezer for a longer shelf life.
