No-Bake Birthday Cake Truffles

Ingredients
  

1 cup crumbled vanilla cake (store-bought or homemade)

½ cup cream cheese, softened

¼ cup powdered sugar

1 tsp vanilla extract

¼ cup rainbow sprinkles (plus more for coating)

1 cup white chocolate chips

1 tbsp coconut oil (optional, for a smoother dip)

Instructions
 

In a mixing bowl, combine the crumbled vanilla cake, softened cream cheese, powdered sugar, vanilla extract, and ¼ cup of rainbow sprinkles. Mix well until the mixture is fully combined and holds together when pressed.

    Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is formed into truffles, placing them on a parchment-lined baking sheet.

      Place the baking sheet in the refrigerator for about 30 minutes to let the truffles firm up.

        While the truffles are chilling, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. If desired, stir in the coconut oil to thin out the chocolate.

          Once the truffles are set, dip each one into the melted white chocolate, allowing excess to drip off.

            Immediately sprinkle additional rainbow sprinkles on top of the dipped truffles before the chocolate sets.

              Return the truffles to the parchment-lined baking sheet and refrigerate for an additional 15 minutes to allow the chocolate to harden.

                Serve chilled or at room temperature. Enjoy these delightful treats at your next birthday celebration!
