Instant pudding mix is a fantastic ingredient in no-bake desserts like our Banana Bliss Pie Cups. It serves as the primary thickening agent for the filling, allowing for a creamy texture without the need for cooking. The science behind this is simple yet fascinating. When you combine instant pudding mix with milk, the starches and proteins within the mix absorb the liquid and swell, creating a smooth and thick consistency. The result is a luscious filling that holds its shape beautifully when layered in the pie cups.

Ingredients

2 ripe bananas, sliced

1 cup heavy whipping cream

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup vanilla pudding mix (instant)

2 cups milk

1 cup crushed graham crackers (about 8-10 full sheets)

1/4 cup unsalted butter, melted

Whipped cream (for topping)

Additional banana slices (for garnish)

Optional: chocolate shavings or crumbled cookie pieces (for garnish)

Instructions

Prepare the Crust: In a medium mixing bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are evenly coated.

Assemble the Cups: Using small serving cups or mini mason jars, evenly distribute the graham cracker mixture at the bottom of each cup, pressing it down slightly to form a crust layer. Set aside.

Make the Banana Layer: Arrange a layer of banana slices on top of the graham cracker crust in each cup, tilting the slices outward for a pretty presentation.

Prepare the Pudding: In another bowl, whisk together the vanilla pudding mix and milk until it thickens (about 2 minutes). Spoon a layer of pudding over the banana slices in each cup.

Whip the Cream: In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form. Gently fold in a portion of the whipped cream into the remaining pudding to lighten it.

Layer the Whipped Cream: Spoon the whipped pudding mixture over the layer of pudding in each cup. Smooth the top with a spatula or the back of a spoon.

Chill: Cover the cups with plastic wrap and refrigerate for at least 2 hours to set.

Serve: Just before serving, top each pie cup with a generous dollop of whipped cream, additional banana slices, and optional garnishes like chocolate shavings or crumbled cookies.
