Ingredients

1 sheet of puff pastry, thawed

2 ripe nectarines, pitted and sliced thinly

8 oz Brie cheese, rind removed and cut into slices

2 tbsp honey

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

1 egg, beaten (for egg wash)

Salt and pepper, to taste

Optional: Balsamic glaze for drizzling

Instructions

Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the puff pastry: On a lightly floured surface, roll out the thawed puff pastry sheet into a rectangle, about 1/8 inch thick. Cut the pastry into 4 equal squares.

Layer the ingredients: Place a slice of Brie cheese in the center of each pastry square. Top with a few slices of nectarine, drizzle with honey, and sprinkle with thyme leaves. Season with salt and pepper to taste.

Fold and seal: Fold the corners of each pastry square into the center to create a pocket encasing the filling. Pinch the edges to seal securely.

Egg wash: Brush the tops of each puff with the beaten egg to give them a beautiful golden color when baked.

Bake: Place the assembled puff melts on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until they are puffed and golden brown.

Serve: Remove from the oven and let cool slightly. Drizzle with balsamic glaze if desired for an extra punch of flavor. Serve warm and enjoy the melty, savory-sweet combination!
