Frittatas are a staple in Italian cuisine, renowned for their simple preparation and rich flavors. The word "frittata" comes from the Italian verb "friggere," which means "to fry." Traditionally, frittatas are made by mixing eggs with various ingredients and cooking them slowly over low heat, creating a dish that is fluffy yet dense. Unlike traditional omelets, which often require folding, frittatas are left open-faced and can include a variety of ingredients, making them a fantastic way to use up leftovers. This ease of preparation and adaptability has contributed to their popularity across different cultures and kitchens worldwide.

Ingredients

6 large eggs

1/2 cup whole milk

1/2 cup shredded cheese (cheddar or your favorite blend)

1 cup diced vegetables (bell peppers, spinach, cherry tomatoes, and/or mushrooms)

1/2 cup cooked and crumbled bacon or sausage (optional)

Salt and pepper, to taste

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Fresh herbs (such as parsley or chives), for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with non-stick cooking spray or line it with muffin liners.

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and whole milk until well combined. Add in garlic powder, onion powder, salt, and pepper, mixing everything evenly.

Add Ingredients: Stir in the shredded cheese, diced vegetables, and cooked bacon or sausage (if using). Make sure the ingredients are evenly distributed throughout the egg mixture.

Fill the Muffin Tin: Carefully pour the egg mixture into each muffin cup, filling them about 3/4 full. Be mindful not to overfill, as the frittatas will puff up while baking.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the frittatas are golden and a toothpick inserted in the center comes out clean.

Cool and Serve: Once baked, remove the muffin tin from the oven and let it cool for 5 minutes. Carefully run a knife around the edges of each frittata to help loosen them, then gently lift them out.

Garnish and Enjoy: Top with freshly chopped herbs for added flavor before serving. Enjoy your muffin tin breakfast frittatas warm or at room temperature!
