1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ teaspoons) active dry yeast

1 tablespoon granulated sugar

4 cups all-purpose flour

1 teaspoon salt

¼ cup unsalted butter, melted

8 ounces fresh mozzarella cheese (cut into small cubes)

¼ cup baking soda

1 large egg (beaten, for egg wash)

Coarse sea salt (for sprinkling)

Optional: Garlic powder, Italian seasoning, or your favorite seasoning blend for flavoring

Instructions
 

Prepare the Yeast Mixture:

    - In a large mixing bowl, combine the warm water, active dry yeast, and granulated sugar. Stir gently and let it sit for about 5-10 minutes until frothy.

      Make the Dough:

        - Add the flour, salt, and melted butter to the yeast mixture. Mix until a dough starts to form. If using a stand mixer, use the dough hook attachment and knead on medium speed for about 5 minutes. If kneading by hand, turn it onto a lightly floured surface and knead for about 10 minutes until smooth and elastic.

          Let the Dough Rise:

            - Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

              Preheat the Oven:

                - Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper and set aside.

                  Shape the Pretzels:

                    - Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a long rope, about 18 inches long. Flatten the center of each rope slightly and place a cube of mozzarella in the middle. Fold the dough over the cheese and pinch the edges to seal well.

                      Form the Pretzel Shape:
