Mojito Berry Pops

Beat the summer heat with refreshing Mojito Berry Pops! These homemade frozen treats combine the invigorating flavors of fresh mint, sweet berries, and zesty lime for a guilt-free snack that's perfect for any hot day. Packed with vitamins and hydrating coconut water, they're a healthy alternative to traditional popsicles. Easy to make and full of flavor, these pops are a delightful way to cool off while enjoying a nutritious summer treat with family and friends.

Ingredients
  

1 cup fresh mint leaves, plus additional for garnish

1 cup fresh strawberries, hulled and sliced

1 cup fresh raspberries

1/2 cup fresh lime juice (about 4 limes)

1/2 cup granulated sugar (adjust to taste)

2 cups coconut water (or sparkling water for an extra fizz)

A pinch of salt

Optional: Lime wedges and mint sprigs for garnish

Instructions
 

Prepare the Mint Syrup: In a small saucepan, combine 1/2 cup of water and the granulated sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves. Once dissolved, add the fresh mint leaves and steep for about 10 minutes. Remove from heat and let it cool. Strain the mixture to remove the mint leaves, and set the syrup aside.

    Blend the Berries: In a blender, combine the strawberries and raspberries. Pulse until smooth. If desired, you can strain the berry mixture to remove seeds for a finer texture, but it's optional.

      Mix The Mojito Base: In a large mixing bowl, combine the strained raspberry-strawberry puree, lime juice, cooled mint syrup, coconut water, and a pinch of salt. Stir well until all the ingredients are mixed together.

        Prepare the Popsicle Molds: If you’re adding chunks of whole berries to your pops, place a few whole raspberries and sliced strawberries into each popsicle mold first.

          Fill the Molds: Carefully pour the mojito mixture into the molds, filling them up to the top. Leave a little space for expansion as they freeze.

            Insert Sticks: If your popsicle mold allows, insert the popsicle sticks into each filled mold. If not, freeze the pops for about 1 hour before inserting the sticks to ensure they hold upright.

              Freeze: Place the molds in the freezer. Freeze for at least 4-6 hours, or until completely solid.

                Unmold and Serve: To release the pops, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the pops. Garnish with additional mint sprigs and lime wedges if desired.
