Ingredients

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/4 cup brown sugar, packed

2 large eggs

1 tsp pure vanilla extract

1/2 tsp peppermint extract

1 cup semi-sweet chocolate chips

1/4 cup crushed peppermint candies for garnish

Instructions

Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In a large bowl, using an electric mixer, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla and peppermint extracts.

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

Fold in the chocolate chips until evenly distributed throughout the batter.

Pour the batter into the prepared baking pan and smooth the top with a spatula.

Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs (not wet).

Let the brownies cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely.

Once cooled, cut into squares and sprinkle with crushed peppermint candies for an extra minty crunch.
