Ingredients

1 sheet of puff pastry (thawed)

2 medium zucchinis, thinly sliced

4 oz goat cheese, softened

1/4 cup crème fraîche

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

1 egg (for egg wash)

Fresh parsley, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface to smooth it out and thin it slightly. Cut the pastry into small circles, about 3 inches in diameter, using a round cutter or a glass. You can also cut them into squares if you prefer.

Form the Tartlet Shells: Place the pastry circles onto the prepared baking sheet. Use a fork to gently prick the centers, leaving about 1/2 inch around the edges to form a border. This will help prevent the center from puffing up too high during baking.

Make the Filling: In a medium bowl, mix together the softened goat cheese, crème fraîche, olive oil, thyme, salt, and pepper until well combined.

Assemble the Tartlets: Spoon a generous amount of the goat cheese mixture into the center of each pastry circle. Arrange the sliced zucchini on top, slightly overlapping them in a spiral or in a single layer as desired.

Egg Wash: In a small bowl, beat the egg. Brush the edges of the tartlet shells with the egg wash to give them a beautiful golden finish during baking.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the pastry is puffed and golden brown, and the zucchini is tender.

Garnish and Serve: Once baked, remove the tartlets from the oven and let them cool slightly. Garnish with fresh parsley and serve warm or at room temperature.
