4 small flour tortillas

1 cup shredded mozzarella cheese

1/2 cup black beans, rinsed and drained

1/2 cup corn (canned or frozen)

1/2 red bell pepper, finely chopped

1/4 cup diced red onion

1/4 cup fresh spinach, chopped

1 teaspoon cumin

1 teaspoon smoked paprika

Pinch of salt and pepper to taste

2 tablespoons olive oil

Salsa or guacamole for dipping (optional)

Prepare the Filling: In a mixing bowl, combine the black beans, corn, red bell pepper, red onion, and spinach. Sprinkle in the cumin, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly coated with spices.

    Heat the Tortillas: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add a tortilla and let it warm for about 30 seconds, until pliable.

      Assemble the Quesadillas: On one half of the warm tortilla, sprinkle a layer of shredded mozzarella cheese followed by a generous spoonful of the veggie mixture. Top with another layer of cheese and then fold the tortilla in half, pressing gently to secure the filling.

        Cook the Quesadillas: Place the folded quesadilla back in the skillet. Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese has melted. Repeat this process for the remaining tortillas, adding more olive oil if necessary.

          Cut and Serve: Remove the quesadillas from the skillet and let them cool for a minute. Using a sharp knife or pizza cutter, slice each quesadilla into 3-4 triangles.
