1/2 cup rolled oats

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup milk (dairy or non-dairy)

2 large eggs

1 tablespoon olive oil

3/4 cup cooked turkey bacon, chopped

1/2 cup shredded cheddar cheese (or dairy-free alternative)

1/4 cup diced bell peppers (any color)

1/4 cup chopped green onions

Optional: 1/4 teaspoon red pepper flakes for heat

Preheat the Oven: Preheat your oven to 375°F (190°C) and spray a mini muffin pan with cooking spray or line it with mini muffin liners.

    Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, salt, black pepper, and optional red pepper flakes if using.
