8 mini sweet bell peppers (any color)

1 can (5 oz) tuna in water, drained

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1/4 cup red onion, finely chopped

1/4 cup celery, finely chopped

1 cup shredded cheddar cheese (or your choice of cheese)

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the Peppers: Wash the mini bell peppers and slice the tops off. Remove the seeds and membranes to create small cups for the filling.

      Make the Tuna Mixture: In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, chopped red onion, chopped celery, half of the shredded cheese, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

        Stuff the Peppers: Spoon the tuna mixture into each mini bell pepper, packing it gently to fill them well. Place the stuffed peppers standing upright in a baking dish.

          Top with Cheese: Sprinkle the remaining shredded cheddar cheese generously over the top of each stuffed pepper.

            Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and the peppers are tender.

              Serve: Remove from the oven and let cool slightly. Garnish with chopped fresh parsley before serving.
