12 English muffins, split in half

12 breakfast sausage links (or patties)

12 large eggs

1 cup shredded cheddar cheese

1 cup spinach leaves (fresh or thawed if frozen)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

Optional: 1/2 teaspoon garlic powder and 1/2 teaspoon onion powder for seasoning the eggs

12 slices of cooked bacon (optional)

A pinch of paprika for garnish

Instructions
 

Prepare the Oven:

    Preheat your oven to 350°F (175°C) to toast the English muffins later.

      Cook the Sausage:

        In a skillet over medium heat, add the olive oil. Cook the sausage links or patties until they are browned and fully cooked, about 8-10 minutes. Remove from the skillet and let them rest on a paper towel to absorb excess grease.

          Make the Egg Mixture:

            In a large mixing bowl, crack the eggs and whisk them well. Add in the salt, black pepper, garlic powder, and onion powder (if using). Whisk until fully combined.

              Cook the Eggs:

                In the same skillet used for the sausage (with a little additional oil if needed), pour the egg mixture over medium heat. Stir gently to scramble the eggs until just set, about 4-5 minutes. Make sure they remain soft and fluffy. Fold in the spinach leaves just before removing from heat, allowing them to wilt slightly.

                  Assemble the Muffin Sliders:

                    On a baking sheet, place the bottom halves of the English muffins. Layer each muffin half with a sausage link, then add a spoonful of scrambled eggs. Top with a generous sprinkle of shredded cheddar cheese. Optionally, add a slice of bacon for extra flavor. Cover each with the top half of the muffin.

                      Toast the Sliders:

                        Place the assembled muffin sliders in the preheated oven for 10-15 minutes, or until the cheese is melted and the muffins are lightly toasted.

                          Serve:

                            Remove the sliders from the oven and let them cool slightly. Optionally, sprinkle a pinch of paprika on top for a nice color and flavor. Cut them in half for better serving and enjoy while warm!
