4 large whole wheat tortillas

1 cup classic hummus (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, thinly sliced

1/2 cup Kalamata olives, pitted and sliced

1/4 cup red onion, thinly sliced

1 cup mixed greens (such as spinach, arugula, or romaine)

1/4 cup feta cheese, crumbled (optional)

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper, to taste

Fresh parsley or dill for garnish (optional)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, olives, red onion, and mixed greens. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to mix well.

    Prepare the Tortillas: Lay out the whole wheat tortillas flat on a clean surface or cutting board.

      Spread the Hummus: Evenly spread about 1/4 cup of hummus over each tortilla, leaving about an inch of space from the edges to make rolling easier.

        Add the Filling: Spoon a portion of the vegetable mixture onto the center of each tortilla, making sure to distribute it evenly. If desired, sprinkle crumbled feta cheese on top.
