Mini Greek Salad Tortilla Cones

Ingredients
  

4 small flour tortillas (6-inch size)

1 cup cherry tomatoes, quartered

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

3 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Prepare the Tortillas:

    - Preheat your oven to 350°F (175°C). Arrange the flour tortillas into a cone shape by folding them in half, then overlapping the sides. Secure each cone using toothpicks.

      - Place the cones upright in a muffin tin to help them hold their shape. Bake for about 5-7 minutes until they are lightly crisped. Remove and let them cool while preparing the filling.

        Make the Salad Filling:

          - In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and chopped parsley.

            Dress the Salad:

              - In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper until well combined. Pour the dressing over the salad mixture and toss gently until everything is coated.

                Assemble the Tortilla Cones:

                  - Carefully remove the toothpicks from the tortilla cones. Use a spoon to fill each tortilla cone with the Greek salad mixture. Hold the cone upright as you fill them to prevent spills.

                    Serve:

                      - Arrange the filled cones on a serving platter. Garnish with extra parsley if desired. Serve immediately for the best crunch, or refrigerate the salad filling separately and fill the cones just before serving.
