Mini Chicken Taco Cups

Ingredients
  

1 pound ground chicken

1 teaspoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning

1 cup canned black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup shredded cheddar cheese

1 package of wonton wrappers (about 30 wrappers)

1/2 cup diced tomatoes

1/2 cup sour cream

1 avocado, diced

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until soft, about 3-4 minutes. Stir in the minced garlic and cook for another minute.

      Season and Combine: Add the ground chicken to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes. Season with taco seasoning, salt, and pepper. Stir in the black beans and corn, mixing until everything is well combined. Remove from heat and let cool slightly.

        Prepare the Wonton Cups: Lightly spray a muffin tin with cooking spray. Take a wonton wrapper and press it into the bottom and up the sides of each muffin cup, forming a small cup. Repeat with remaining wrappers.

          Fill the Cups: Spoon the chicken mixture into each wonton cup. Top with shredded cheddar cheese.

            Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and the wonton edges are golden brown.

              Garnish and Serve: Once done, remove from the oven and let cool for a few minutes. Top each mini taco cup with diced tomatoes, a dollop of sour cream, diced avocado, and a sprinkle of fresh cilantro.
