1 can (16.3 oz) refrigerated biscuit dough

1 lb ground chicken

1 packet (1 oz) taco seasoning

1/2 cup diced onion

1/2 cup black beans, drained and rinsed

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup diced tomatoes

1/4 cup sour cream

1 jalapeño, thinly sliced (optional)

Fresh cilantro, chopped (for garnish)

Cooking spray or olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray it with cooking spray or brush it with olive oil.

    Cook the Chicken: In a large skillet, cook the ground chicken over medium heat until browned and fully cooked. Drain any excess fat.

      Add Flavor: Stir in the taco seasoning and diced onion. Cook for an additional 2-3 minutes until the onion is soft and fragrant. Add the black beans and stir until all ingredients are well combined. Remove from heat.

        Prepare the Biscuits: Open the can of biscuit dough and separate each biscuit. On a clean, lightly floured surface, flatten each biscuit into a small round disc, about 1/4 inch thick.

          Fill the Biscuits: Place a spoonful of the chicken mixture in the center of each flattened biscuit. Top with a sprinkle of shredded cheese and diced tomatoes. If desired, add a few slices of jalapeño for extra heat.

            Seal and Bake: Fold the biscuits over to create a pocket, pinch the edges to seal them securely. Place the filled biscuits onto the prepared baking sheet. Optionally, brush the tops with a little olive oil for a golden finish.

              Bake: Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown and cooked through.

                Serve: Remove from the oven and allow to cool slightly. Serve warm with a dollop of sour cream and a sprinkle of fresh cilantro on top.
