Mini Chicken Ranch Tortilla Pizzas

Ingredients
  

4 small flour tortillas

1 cup cooked chicken, shredded (grilled or rotisserie)

1 cup ranch dressing

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/4 cup green bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup black olives, sliced (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley or cilantro, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tortillas: Brush both sides of each tortilla lightly with olive oil. Place them on a baking sheet lined with parchment paper.

      Mix Chicken with Dressing: In a medium bowl, combine the shredded chicken with half of the ranch dressing. Mix well until the chicken is fully coated.

        Layer Ingredients:

          - Spread a thin layer of the remaining ranch dressing on each tortilla as the base sauce.

            - Evenly distribute the ranch-coated chicken over each tortilla, leaving some space on the edges.

              - Sprinkle mozzarella cheese generously on top of the chicken.

                - Add tomato halves, diced green bell peppers, chopped red onion, and sliced black olives on top of the cheese.

                  Season: Lightly season each mini pizza with salt and pepper.

                    Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the tortillas are crisp and the cheese is melted and bubbling.

                      Garnish: Remove from the oven and let them cool for a minute. Garnish with freshly chopped parsley or cilantro.

                        Serve: Slice into quarters and serve warm, accompanied by extra ranch dressing for dipping.
