Mini Breakfast Pizza with Green Chili

1 pre-made pizza dough (store-bought or homemade)

4 large eggs

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded mozzarella cheese

1/2 cup diced green chili (mild or hot, based on your preference)

1/2 cup diced bell peppers (any color)

1/4 cup sliced green onions

1/4 cup crumbled cooked breakfast sausage or bacon (optional)

1 tablespoon olive oil

Fresh cilantro or parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). If you have a pizza stone, place it in the oven to heat up for a crispier crust.

    Prepare the Dough: Roll out the pizza dough on a lightly floured surface to about 1/4 inch thick. Use a round cookie cutter or a small bowl to cut out small circles of dough, approximately 3-4 inches in diameter. You should get about 6-8 mini pizzas.

      Prepare the Egg Mixture: In a medium bowl, whisk the eggs, milk, salt, and black pepper until well combined. Set aside.

        Sauté Vegetables: In a skillet over medium heat, add the olive oil. Once hot, add the diced bell peppers and green chilis. Sauté for about 2-3 minutes until they are slightly softened. If using sausage or bacon, add it now to warm through. Remove from heat.

          Assemble the Pizzas: On a baking sheet lined with parchment paper, place the mini dough circles. Spoon a small amount of the sautéed vegetable mixture onto each circle. Next, pour a pinch of the egg mixture over the veggies (about 1-2 tablespoons, depending on the size). Top with shredded mozzarella cheese and sprinkle some green onions on top.

            Bake the Pizzas: Carefully place the baking sheet in the preheated oven (or on the pizza stone) and bake for about 10-12 minutes or until the egg is set, and the cheese is bubbly and slightly golden.
