6 large eggs

1/4 cup milk

1 cup shredded cheese (cheddar or a blend)

1/2 cup diced bell peppers (mix of red and green)

1/2 cup cooked and crumbled breakfast sausage or diced ham (optional)

1/4 cup finely chopped green onions

1/2 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

6 small flour tortillas (6-inch)

Salsa or hot sauce for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a standard muffin tin with cooking spray or oil to prevent sticking.

    Prepare the Egg Mixture: In a large bowl, whisk together the eggs and milk until well combined. Add the shredded cheese, diced bell peppers, breakfast sausage (if using), green onions, garlic powder, paprika, salt, and pepper. Mix until all ingredients are incorporated.

      Fill the Tortillas: Warm the flour tortillas in the microwave for about 10-15 seconds to make them pliable. Cut each tortilla into quarters. Take each quarter and form a cup shape in the muffin tin compartments, pressing lightly to mold them to the sides.

        Add Filling: Spoon the egg mixture evenly into the tortilla cups, filling each to about 3/4 full. Ensure the filling is distributed evenly among all cups.

          Bake: Place the muffin tin in the preheated oven and bake for about 15-18 minutes or until the egg is fully set and the tops are lightly golden.

            Cool and Serve: Once baked, let the mini burrito bites cool for a couple of minutes in the tin. Carefully remove them using a fork or small spatula. Serve warm with salsa or hot sauce on the side if desired.
