2 cups shredded rotisserie chicken

1 cup BBQ sauce (your choice of flavor)

4 small flatbreads or pita breads

1 cup shredded mozzarella cheese

1/2 cup diced red onion

1/2 cup sliced bell peppers (any color)

1/4 cup chopped fresh cilantro

1 teaspoon olive oil

Salt and pepper, to taste

Optional: sliced jalapeños for heat

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken: In a mixing bowl, combine the shredded rotisserie chicken with 3/4 cup of BBQ sauce, stirring well to coat evenly. Adjust seasoning with salt and pepper if needed.

      Prep Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper. Brush a light layer of olive oil on top of each flatbread to prevent them from becoming too crispy.

        Assemble Layers: Evenly spread the BBQ chicken mixture on each flatbread, leaving a small border around the edges. Sprinkle the top with mozzarella cheese then add the diced red onion and sliced bell peppers.

          Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly and the edges of the flatbreads are golden brown.

            Finishing Touches: Once out of the oven, sprinkle the chopped cilantro over the top. If desired, add sliced jalapeños for an extra kick.

              Slice and Serve: Allow the flatbreads to cool for a couple of minutes before slicing into quarters or smaller squares. Serve warm, with extra BBQ sauce on the side for dipping.
