Ingredients

1 cup cooked chicken, shredded

1/2 cup BBQ sauce (your favorite brand)

1 cup cornmeal

1 cup all-purpose flour

1/4 cup sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/4 cup vegetable oil

2 large eggs

1 cup shredded cheddar cheese

1/4 cup chopped green onions (for garnish)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin or use silicone muffin cups for easy removal.

Mix Chicken & BBQ Sauce: In a medium bowl, combine the shredded chicken and BBQ sauce. Mix well until the chicken is fully coated. Set aside.

Prepare Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until combined.

Combine Wet Ingredients: In a separate bowl, mix the milk, vegetable oil, and eggs. Whisk until well blended.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix, as this can make the cornbread tough.

Add Cheese: Gently fold in the shredded cheddar cheese into the batter.

Fill Muffin Tin: Spoon a tablespoon of the cornbread batter into the bottom of each muffin cup. Top with a spoonful of the BBQ chicken mixture, followed by another tablespoon of cornbread batter, completely sealing the chicken inside.

Bake: Place the muffin tin in the preheated oven. Bake for about 15-20 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Let the cornbread cups cool in the muffin tin for about 5 minutes. Carefully remove them and place on a wire rack. Garnish with chopped green onions before serving.

Enjoy: Serve warm as a delicious appetizer or snack!
