Mini Baked Mac & Cheese Nuggets

Ingredients
  

2 cups elbow macaroni

4 tablespoons unsalted butter

4 tablespoons all-purpose flour

2 cups whole milk

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs

2 large eggs, beaten

Olive oil spray (for greasing)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 2 minutes until it becomes a light golden color (this is your roux).

      Add Milk: Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, whisking constantly, until the mixture thickens, about 5-7 minutes.

        Add Cheese and Seasoning: Remove the pot from heat and stir in the cheddar and mozzarella cheeses until melted and smooth. Add the garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and mix until evenly coated. Let it cool for about 10 minutes.

            Prepare the Nugget Mixture: Preheat your oven to 375°F (190°C). Once the mac and cheese mixture is cool, add 1 beaten egg and mix thoroughly. This will help bind the mixture.

              Form the Nuggets: Use a tablespoon to scoop out the mac and cheese mixture and form small nugget shapes. Place them on a greased baking sheet lined with parchment paper.

                Coat the Nuggets: In a shallow dish, add the panko breadcrumbs. Dip each mac & cheese nugget in the remaining beaten egg (for adhesive) and then roll it in the panko breadcrumbs until fully coated. Place them back on the baking sheet.

                  Bake: Spray the nuggets lightly with olive oil to help them crisp up. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.

                    Serve: Remove from the oven and let them cool slightly before serving. Enjoy them plain or with your favorite dipping sauces!
