Ingredients

For the Pancakes:

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 cup milk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

For the Apple Filling:

2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

For the Maple Cream Cheese Spread:

4 oz cream cheese, softened

1/4 cup maple syrup

1/2 teaspoon vanilla extract

Instructions

Prepare the Apple Filling:

    - In a medium saucepan over medium heat, combine the diced apples, brown sugar, cinnamon, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender but not mushy. Remove from heat and set aside to cool.

      Make the Pancake Batter:

        - In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.

          - In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.

            - Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; it's okay if there are a few lumps.

              Cook the Pancakes:

                - Preheat a non-stick skillet over medium heat. Grease with a little butter or cooking spray.

                  - Pour about 2 tablespoons of pancake batter for each mini pancake onto the skillet. Cook for 1-2 minutes, or until bubbles form on the surface and the edges start to look set. Flip and cook for another 1-2 minutes until golden brown.

                    - Repeat until all batter is used, adjusting heat as necessary to prevent burning.

Prepare the Maple Cream Cheese Spread:

                        - In a small bowl, blend the softened cream cheese with maple syrup and vanilla extract until smooth and creamy.

                          Assemble the Sliders:

                            - Take one mini pancake as the base, spoon a small amount of apple filling on top, add another pancake as the lid, and spread with the maple cream cheese. Continue layering to create sliders with additional pancakes if desired.

                              Serve:

                                - Stack and serve the mini pancake sliders on a platter, drizzling with extra maple syrup or sprinkling with powdered sugar for an extra touch!
