Ingredients

1 tablespoon unsalted butter, melted

1 tablespoon granulated sugar

1 tablespoon brown sugar, packed

1/4 teaspoon vanilla extract

1 pinch of salt

1 egg yolk (discard the white or save for another use)

3 tablespoons all-purpose flour

1 tablespoon mini chocolate chips (or more, depending on your cravings)

Optional: a sprinkle of sea salt for topping

Instructions

In a microwave-safe mug (roughly 12 oz capacity), melt the butter in the microwave for about 20 seconds.

Once melted, add the granulated sugar, brown sugar, and vanilla extract to the mug. Stir until well combined and the mixture is smooth.

Add the egg yolk to the mixture, and stir vigorously until fully incorporated.

Sprinkle in the pinch of salt and the flour. Stir until just combined, being careful not to overmix.

Fold in the mini chocolate chips, ensuring they are evenly distributed throughout the dough.

Optional: If you're a fan of sweet and salty, add a little sprinkle of sea salt on top.

Microwave the mug on high for 40 to 60 seconds. Start with 40 seconds, then check the cookie. If the top is set and slightly firm to the touch, it’s done. Be careful not to overcook, as the cookie will continue to cook while cooling.

Allow the mug cookie to cool for a minute or two before diving in. Enjoy it warm, ideally topped with a scoop of ice cream or a drizzle of chocolate sauce!
