2 cups shredded Mexican blend cheese (or Monterey Jack and Cheddar)

1 cup cream cheese, softened

1 cup evaporated milk

1 cup diced tomatoes with green chilies (like Rotel)

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon cumin

½ teaspoon paprika

Salt and pepper to taste

¼ cup chopped fresh cilantro (optional, for garnish)

Tortilla chips, for serving

Instructions
 

In a medium saucepan over low heat, combine the cream cheese and evaporated milk. Stir well until the cream cheese is melted and the mixture is smooth.

    Gradually add the shredded Mexican cheese blend, stirring continuously until fully melted and well integrated into the mixture.

      Stir in the diced tomatoes with green chilies, garlic powder, onion powder, cumin, paprika, salt, and pepper. Mix well until everything is evenly distributed.

        Cook the dip on low heat for about 5-7 minutes, stirring occasionally. Do not let it boil; just keep it warm until ready to serve.
