4 sea bass fillets (about 6 oz each)

1/2 cup pure maple syrup

1/4 cup pumpkin puree

2 tablespoons Dijon mustard

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Glaze: In a medium bowl, whisk together the maple syrup, pumpkin puree, Dijon mustard, olive oil, lemon juice, garlic powder, cinnamon, nutmeg, salt, and pepper until well combined.

    Marinate the Sea Bass: Place the sea bass fillets in a shallow dish and pour half of the maple pumpkin glaze over them. Allow the fillets to marinate for at least 30 minutes at room temperature, or up to 1 hour in the refrigerator for deeper flavor.

      Preheat Oven: Preheat your oven to 375°F (190°C).

        Bake the Sea Bass: After marination, remove the sea bass from the dish and place the fillets skin-side down on a lightly greased baking sheet. Reserve the marinade. Bake in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork.

          Glaze the Fish: While the fish bakes, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer for about 5-7 minutes, allowing it to thicken slightly.

            Serve: Once the sea bass is done baking, remove it from the oven and brush the thickened glaze over the fillets. Garnish with freshly chopped parsley.
