1 cup couscous

1 ½ cups vegetable broth

1 medium zucchini, diced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup cooked chickpeas (canned or pre-cooked)

½ red onion, finely chopped

1 cup baby spinach

½ cup feta cheese, crumbled (optional for a vegan option)

¼ cup kalamata olives, pitted and sliced

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon ground cumin

2 tablespoons olive oil

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley for garnish

Prepare the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, remove from heat, cover, and let it sit for about 5 minutes. Fluff with a fork once done.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the red onion and toss for about 2-3 minutes until softened. Then, add the zucchini, red bell pepper, and cherry tomatoes, cooking for another 5-7 minutes until the veggies are tender.
