1 cup orzo pasta

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 tablespoon lemon juice

Salt and pepper to taste

Cook the Orzo: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the orzo pasta and cook for 8-10 minutes, or until al dente, stirring occasionally. Drain and set aside to cool.

    Prepare the Vegetables: While the orzo is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl.

      Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, and pepper. Adjust the seasoning to taste.

        Combine Ingredients: Once the orzo has cooled, add it to the bowl with the chopped vegetables. Then add the Kalamata olives, crumbled feta cheese, parsley, and basil.

          Toss Everything Together: Drizzle the dressing over the orzo mixture and gently toss everything until it's well combined and all ingredients are coated with the dressing.

            Serve: Divide the Mediterranean orzo bowl among serving plates or bowls. Garnish with additional herbs, a sprinkle of feta, and a drizzle of olive oil if desired.
