1 sheet of puff pastry, thawed

1 cup cherry tomatoes, halved

1 medium zucchini, sliced

1 medium bell pepper (any color), chopped

1 small red onion, sliced

2 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon pure maple syrup

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper, to taste

1/2 cup feta cheese, crumbled (optional)

Fresh basil leaves, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface to fit your tart pan or baking sheet. Cut into desired shapes (squares or circles) and place onto parchment-lined baking sheets.

      Roast the Vegetables: In a large bowl, combine the cherry tomatoes, zucchini, bell pepper, and red onion. Drizzle with olive oil, balsamic vinegar, and maple syrup. Sprinkle in dried thyme, garlic powder, salt, and pepper. Toss everything together until well-coated.

        Arrange on Pastry: Distribute the roasted vegetable mixture evenly over the puff pastry bases, making sure not to overcrowd them.

          Bake the Tarts: Place the tarts in the preheated oven and bake for 20-25 minutes or until the pastry is golden brown and crispy, and the vegetables are tender and slightly caramelized.
