Mango Coconut Popsicles

2 ripe mangoes, peeled and diced

1 cup coconut milk (canned or carton)

1/2 cup coconut cream

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lime juice (freshly squeezed)

1/2 teaspoon vanilla extract

Pinch of salt

Optional: Fresh mango chunks and shredded coconut for added texture

Instructions
 

Prepare the Mangoes: Place the diced mangoes in a blender. Blend until smooth to create a mango puree. If you like some texture, reserve a few small mango chunks for later.

    Mix the Coconut Base: In a separate bowl, whisk together the coconut milk, coconut cream, honey (or maple syrup), lime juice, vanilla extract, and a pinch of salt until well combined.

      Layer the Mixture: In popsicle molds, start by adding a layer of the mango puree to the bottom. If using, sprinkle in a few small mango chunks and some shredded coconut for added texture.

        Add the Coconut Mix: Carefully pour the coconut mixture over the mango layer until the molds are filled. You can layer it with more mango puree and shredded coconut for a beautiful effect.

          Insert Sticks: If your molds allow for it, place popsicle sticks in the center of each mold. Ensure they stand upright by securing them with a piece of foil over the top of the mold.

            Freeze the Popsicles: Place the molds in the freezer for at least 6 hours, or until completely frozen.

              Unmold and Serve: To remove the popsicles, run warm water over the outside of the molds for a few seconds to loosen them. Gently pull out the popsicles and enjoy your delicious tropical treat!
