Mango Black Bean Salsa

Ingredients
  

2 ripe mangoes, peeled, pitted, and diced

1 can (15 oz) black beans, drained and rinsed

1 red bell pepper, finely chopped

1 small red onion, finely diced

1 jalapeño, seeded and minced (optional for spice)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

Salt and pepper, to taste

Instructions
 

In a large mixing bowl, combine the diced mangoes, black beans, red bell pepper, red onion, and jalapeño.

    Add the chopped cilantro to the mixture and stir gently to combine all the ingredients evenly.

      In a separate small bowl, whisk together the lime juice, ground cumin, salt, and pepper until well combined.

        Pour the lime dressing over the salsa mixture and toss everything gently until coated.

          Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 20 minutes to allow the flavors to meld together.

            Taste before serving and adjust the seasoning with more salt, pepper, or lime juice if necessary.

              Serve your Mango Black Bean Salsa with tortilla chips, on tacos, or as a fresh topping for grilled fish or chicken.
