Mango Basil Chicken Wraps

2 boneless, skinless chicken breasts

1 ripe mango, peeled and diced

1 cup fresh basil leaves, chopped

1 cup baby spinach leaves

1 red bell pepper, sliced

1 avocado, sliced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 large whole-wheat tortillas

Juice of 1 lime

Optional: ½ cup Greek yogurt or sour cream for dressing

Marinate the Chicken: In a bowl, combine olive oil, garlic powder, onion powder, salt, and pepper. Add the chicken breasts, coating them well. Let marinate for at least 15 minutes (or up to 2 hours in the fridge for enhanced flavor).

    Cook the Chicken: Preheat a grill pan over medium-high heat. Grill the chicken breasts for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

      Prepare the Veggies: While the chicken is resting, prepare the veggies. In a large bowl, mix the diced mango, chopped basil, baby spinach, and sliced red bell pepper. Squeeze fresh lime juice over the mixture and toss gently to combine.

        Assemble the Wraps: Lay a tortilla flat. Place a generous amount of the mango-basil veggie mix on the tortilla. Top with sliced grilled chicken and avocado. If desired, spread a little Greek yogurt or sour cream on top before rolling.

          Roll & Serve: Roll the tortilla tightly, folding in the sides as you go to encapsulate the filling. Cut the wrap in half diagonally and serve immediately, or wrap in foil for a convenient on-the-go meal.
