1 cup fresh coconut milk

1 cup fresh pineapple chunks (preferably ripe)

1 tablespoon honey or agave syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup unsweetened shredded coconut

Optional: Pineapple slices or chunks for decoration

Instructions
 

Blend the Base: In a blender, combine the fresh coconut milk, pineapple chunks, honey or agave syrup, and vanilla extract. Blend until smooth and creamy.

    Mix in Shredded Coconut: Pour the blended mixture into a bowl and stir in the unsweetened shredded coconut. This adds a delightful texture to your popsicles.

      Prepare the Molds: If you're using whole pineapple slices or chunks for decoration, place a small piece at the bottom of each popsicle mold. This step is optional but adds a fun visual element!

        Fill the Molds: Pour the coconut-pineapple mixture into the popsicle molds, leaving a little space at the top as they may expand when freezing.

          Insert Sticks: If your molds come with sticks, insert them into the mixture. If not, you can cover the molds with foil and carefully poke wooden sticks through to keep them upright.

            Freeze: Place the molds in the freezer for at least 6-8 hours, or until completely frozen.

              Unmold and Serve: To remove the popsicles, run warm water over the outside of the molds for a few seconds to loosen them. Gently pull on the sticks to release the pops.

                Garnish (optional): If desired, sprinkle a bit more shredded coconut on top before serving to enhance the tropical flavor.
