Loaded Taco Rice Casserole

1 cup uncooked brown rice

2 cups vegetable broth (or chicken broth)

1 lb ground beef or turkey (or plant-based meat for a vegetarian option)

1 packet taco seasoning

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can corn, drained

1 (10 oz) can diced tomatoes with green chilies (like Ro-Tel)

1 cup corn tortilla chips, crushed

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup chopped green onions

1/2 cup sour cream (or Greek yogurt)

1 avocado, diced

Optional toppings: sliced jalapeños, cilantro, sliced olives

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Rice: In a medium saucepan, combine the uncooked brown rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes or until the rice is tender and the liquid is absorbed.

      Brown the Meat: While the rice cooks, heat a large skillet over medium heat. Add the ground meat and cook until browned, breaking it apart with a spatula. Drain any excess fat.

        Season: Stir in the taco seasoning, black beans, corn, and diced tomatoes with green chilies. Mix well and let it simmer for another 5 minutes.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice and the meat mixture. Fold in half of the crushed tortilla chips and half of the green onions. Mix until well combined.

            Layer the Casserole: Pour half of the rice and meat mixture into a greased 9x13 inch (or similar) baking dish. Sprinkle half of both types of cheese over the top. Add the remaining rice mixture, followed by the remaining cheese.

              Top with Chips: Spread the remaining crushed tortilla chips on top of the casserole for added crunch.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                  Garnish & Serve: Once out of the oven, let the casserole cool for a few minutes. Top with the remaining green onions, sour cream, diced avocado, and any other optional toppings you desire.
