1 pound potato gnocchi (store-bought or homemade)

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup cherry tomatoes, halved

1 cup cooked bacon, chopped (or turkey bacon for a lighter option)

1 cup corn kernels (fresh, frozen, or canned)

1 cup heavy cream or a non-dairy alternative

1½ cups shredded cheese (cheddar and mozzarella blend recommended)

½ teaspoon smoked paprika

Salt and pepper to taste

Chopped green onions or chives for garnish

Optional: crushed red pepper flakes for a kick

Cook Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions (usually around 3 to 5 minutes) until they float to the surface. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent. Add garlic and bell pepper, cooking until the pepper softens (about 4 minutes). Stir in the cherry tomatoes and corn, cooking for an additional 2 minutes.

      Combine Ingredients: Add the cooked gnocchi and bacon to the skillet, stirring gently to combine.

        Make the Sauce: Pour in the heavy cream, add the smoked paprika, and season with salt and pepper. Stir gently until everything is well-coated.

          Add Cheese: Sprinkle in the shredded cheese, reserving a bit for topping. Stir until melted and incorporated into the dish.

            Bake the Skillet: If your skillet is oven-safe, top with remaining cheese, and place it under the broiler for about 3-5 minutes until the cheese is bubbly and golden brown. If not, transfer to an oven-safe dish before broiling.
