1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

Zest and juice of 2 lemons

1 teaspoon honey

Salt and pepper to taste

4 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 avocado, sliced

1/4 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled

Fresh herbs (parsley or basil) for garnish

Instructions
 

Prep the Shrimp: In a bowl, combine the shrimp, olive oil, minced garlic, lemon zest, and lemon juice. Season with salt and pepper. Let marinate for about 15 minutes.

    Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp to the pan and cook for 2-3 minutes on each side until they turn pink and opaque. Remove from heat and set aside.

      Make the Dressing: In a small bowl, whisk together the remaining lemon juice, honey, a pinch of salt and pepper, and a drizzle of olive oil until well combined.
