Ingredients

For the Donuts:

1 cup all-purpose flour

1/3 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup poppy seeds

1/2 cup buttermilk

1/4 cup vegetable oil

1 large egg

Zest of 1 lemon

1 tablespoon fresh lemon juice

For the Glaze:

1 cup powdered sugar

2 tablespoons fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

Optional: A pinch of salt for balancing sweetness

Instructions

Preheat Your Oven:

Preheat the oven to 350°F (175°C). Grease a donut pan with cooking spray or a light coat of oil to prevent sticking.

      Mix Dry Ingredients:

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and poppy seeds until well combined.

          Combine Wet Ingredients:

In a separate bowl, whisk together the buttermilk, vegetable oil, egg, lemon zest, and lemon juice until smooth and creamy.

              Combine Mixtures:

Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix. The batter should be slightly lumpy.

                  Fill the Donut Pan:

Transfer the batter to a piping bag or a zip-top bag with a corner snipped off. Fill each donut well in the pan about 2/3 full.

                      Bake:

Bake in the preheated oven for about 10-12 minutes or until the donuts spring back when lightly pressed. A toothpick inserted into the center should come out clean.

                          Cool the Donuts:

Remove from the oven and let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

                              Prepare the Glaze:

In a medium bowl, whisk together the powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth. If the glaze is too thick, add a tiny bit more lemon juice until you reach your desired consistency.

                                  Glaze the Donuts:

Once the donuts are completely cooled, dip the tops into the glaze or drizzle it over the donuts with a spoon.

                                      Serve:

Allow the glaze to set for a few minutes before serving. Enjoy your Lemon Poppy Seed Donuts with a cup of tea or coffee!
