Ingredients

1 cup orzo pasta

2 medium zucchinis, diced

2 tablespoons olive oil

2 cloves garlic, minced

1 lemon (zest and juice)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup fresh basil, chopped

Salt and pepper to taste

Optional: Red pepper flakes for added heat

Instructions

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Sauté the Zucchini: In a large skillet, heat the olive oil over medium heat. Add the diced zucchini and sauté for about 5 minutes, or until they start to soften.

Add Garlic: Stir in the minced garlic and cook for an additional minute, until fragrant.

Combine and Flavor: Add the drained orzo to the skillet with the sautéed zucchini. Mix well, then add the lemon zest, lemon juice, and Parmesan cheese. Stir until fully combined. Season with salt, pepper, and optional red pepper flakes to taste.

Finish with Basil: Remove from heat and fold in the fresh basil. Adjust seasoning if necessary.

Serve: Spoon the orzo into bowls, garnish with extra Parmesan and basil if desired, and enjoy your fresh, zesty dish!
