Lemon Garlic Tuna Pasta

Ingredients
  

8 oz (225 g) spaghetti or linguine

2 cans (5 oz each) tuna in olive oil, drained

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Zest of 1 lemon

Juice of 1 large lemon

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Freshly grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes, until the garlic is fragrant but not browned.

      Add Tuna & Tomatoes: Gently fold in the drained tuna, breaking it up slightly. Add the cherry tomatoes and cook for about 3-4 minutes until the tomatoes soften.

        Combine with Pasta: Lower the heat and add the cooked pasta to the skillet. Pour in the lemon juice and zest. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

          Season: Stir in the chopped parsley, and season with salt and pepper to taste. Give it one last toss to ensure everything is well-coated.

            Serve: Plate the pasta, optionally garnishing with extra parsley and freshly grated Parmesan cheese. Enjoy warm!
